Windfall Apples

One of the first things that I did when I renovated my old farmhouse in 2005 was plant a few fruit trees. These are now rewarding me in spades although they the apples don’t usually fall in such quantities at the one time. We had a lot of heavy wind a couple of weeks ago though and this collection is just from two trees; the red ones are eaters and underneath are cookers. Not wanting to waste any, I put my new eco printing pot to good use as it took time to process them! Thankfully they’ve been converted into juice and compote now and I can’t believe how full my freezer is getting. There are still loads of apples on the trees but the weather is glorious now so they should only fall as they fully ripen. What’s your favourite way of eating or preserving them?
