03 Jun Foraging along the lane
Good morning from rural Ireland. The hedgerows are very lush right now and one of my favourite flowers to forage are the various vetches growing on the lane leading down from the country road to my old farmhouse at Ballybrack, Co. Carlow. I can’t resist nibbling on the tips of the flower heads as I walk up and down to the post box and love to gather them to include in salads. Their violet colour looks beautiful again as the softer lilac of chive flowers and their pea like flavour add a burst of freshness. Do you enjoy them raw or have you some other way or using them?
